Strawberry Chia Jam

This delicious nutritious Strawberry Chia Jam can be used as a spread, but also as an indulgent guilt free topping on your Sunday pancakes. I used frozen strawberries in this recipe, but you can use fresh or frozen. And you don’t even have to use strawberries, any berries will do!

Ingredients

1 cup (130g/4.6oz) fresh or frozen strawberries

1 Tbsp pure maple syrup or brown rice syrup

3 Tbsp water

1 heaped Tbsp chia seeds

Method

Place the strawberries, maple syrup and water into a small pot over low heat, stirring gently.

Once the mixture starts to bubble, remove from heat and gently mash with a masher.

Let the mixture cool for 5 minutes and then stir in the chia seeds.

Let it set for an hour, then enjoy.

Store in the fridge for up to 2 weeks.
