Easy Potato Curry

Super easy potato curry, with minimal ingredients, and not too spicy so even the fussiest eater will love it

INGREDIENTS

  • 250 g potatoes, chopped into cubes

  • 400 ml can lentils

  • 400 ml can coconut milk

  • 400 ml can pasta sauce

  • 2 Tbsp curry powder

  • 2 cups veges (brocolli or cauliflower or both)

INSTRUCTIONS

  • Add onion and garlic to a large pot and saute until soft

  • Parboil the cubed pototoes

  • Add veges to the onion garlic mix with the cury powder and some water so the veges don't stick to the bottom of pot. Mix together until curry is well coating the veges, continuing to add water as needed

  • Add pasta sauce to the veges and cook for 15 – 20 mins

  • Add pototoes and cook for another 10 mins

  • Poor in the coconut milk and simmer for 10 mins

  • Serve over brown rice, with a dollop of coconut yoghut on top

NOTES

The longer you cook curry the better it tastes. I love to start this one around lunch time and simmer softly until it’s ready to serve for dinner
